The students are suggested to pass before the exams of economics of the first semester.
The students are evaluated by means of a group project work that the students have to present to the class. Criteria of evaluation will be presented to students in the first lectures.
At the end of the course the students will be able to:
1. Analyze and discuss the key concepts and principles of hotel organizations;
2. Demonstrate an appropriate level of understanding of current hotel organization models;
3. Critically analyse the impact of key stakeholder groups in the context of a hotel organization;
4. Develop problem solving skills being able to use organization models to decision making in the hotel business,
5. Demonstrate skills in oral and written communication as well as critical and analytical thinking in accordance with the specific professional context,
6. Work independently and as a team member to gather and analyse information to guide problem solving and decision making.
The course has two parts. In the first part the course dealt with the organization of hotel companies. Main topics wills be:
1. The basic dimensions along which organizations can be differentiated
a. Organization theory as a discipline and as a field of study
b. The systemic vision of the organization
c. How to analyze organizations: the structural dimensions of the organization and the contingent factors that affect them
d. Comparison between different approaches to organizational design
e. Environment, strategy and organization. How to interpret the organizational environment: components, complexity, instability, uncertainty. The influence of the environment on design.
2. Organization theory for hospitality companies
3. Analysis of the different organizational units within a hospitality company
4. New forms of hospitality focusing on sustainability
5. Revenue management in the hotel industry
6. The organization of sustainable events
The second part of the course applies theory to practice by means of case studies, company visits and project works.
The teaching is proposed through lectures conducted by the lecturer with the use of supporting materials (slides, examples, practical cases, bibliographical materials...), and discussions among students on specific topics indicated by the lecturer.
The material presented in class will be made available on the dedicated Moodle page of the course.
Attending students are required to proceed systematically with their independent study of the reference material, in order to prepare for and actively participate in the proposed discussions.
The second part of the course has more a learnign by doing approach. Theory is applied to practice with the following activities:
- Workshops and seminar of hotel managers;
- Case studies;
- company visits;
- project works.
